  • chickpea flour – it is the main ingredient in this recipe, it’s also called garbanzo bean flour
  • green onions – I used chopped green onions for extra flavor. You can also add thinly chopped shallots or onion to it.
  • cumin – optional but adds flavor, you can change up the herbs and spices for variation
  • garlic powder – also optional, you can add your favorite herbs and spices like thyme, rosemary, red pepper, black pepper, basil, etc.

  • Preheat the oven to 400°F (200°C) and line a round baking pan with parchment paper.
  • In a medium bowl, combine the chickpea flour, salt, cumin, garlic powder, and water. Whisk until smooth.
  • After that, add the chopped onions to the bowl and stir.
  • Pour the batter into the prepared baking pan (mine measures 20 cm/8 inch).
  • Sprinkle some red pepper flakes on top and bake for about 20 mins until slightly brown.
  • Let it cool for a few minutes, slice and enjoy!

Notes

  • Chickpea flour can also be called garbanzo bean flour.
  • You can add your favorite herbs and spices like thyme, rosemary, red pepper, black pepper, basil, etc.
  • Instead of green onions, you can add chopped onion or shallots.

    Not sure what I did wrong with this recipe. It turned out soggy and too oniony. I even cooked it longer. If I make it again, I will cut the onion amount in half.

    Does the type of pan matter? I used a ceramic pan, because that’s what I had in 8 inch size. Would a metal pan make a difference?

    Usually your recipes work out well for me, so I was surprised. Any suggestions appreciated.

      A few factors might have contributed to the sogginess and strong onion flavor. Reducing the amount of onion, as you mentioned, is a good idea if you found it too strong. Additionally, the type of pan can indeed make a difference. Metal pans generally conduct heat more efficiently and can help achieve a better texture, so using a metal pan might improve the result.

      Another tip about the strong onion flavor is to sautée it until translucent before adding it to the mix, as this can reduce its strong flavor and excess moisture.

      you’re welcome! I’m glad you enjoyed the recipe. I haven’t personally tried freezing the chickpea flatbread, but it should freeze well. Just make sure to wrap it tightly to prevent freezer burn. When you’re ready to enjoy it again, reheat it in the oven until crisp again.
