This nutritious salad has the most inviting vibrant colors.

And it is as tasty as it is beautiful. Juicy and full of freshness.

Beets, radishes, kohlrabi, carrots all in one plate!

Raw root vegetables contain all the essential proteins and are a powerhouse for health-boosting micronutrients.

It can be served as a main dish or as a salad for another main meal.

Sprinkled with some hemp seeds this salad is a complete health booster!

This is a salad that is as rich in nutrients as it is colorful. Only whole natural plant ingredients are used to make sure you get all the nutrition in the way nature intended.

It is rich in root vegetables that contain all the essential amino acids (proteins) and fats as well as vitamins A, C, manganese, potassium, iron… Also super-rich in antioxidants that reduce free radicals and detoxify the body.

Beets are also known to improve athletic performance. Radishes are cruciferous vegetables that contains the powerful immune system boosting and cancer-fighting micronutrient sulforaphane.

Garlic is known in many cultures as a superfood and for a good reason. It is super rich in antioxidants and other immune boosters – organosulfur compounds.

Lemons, although with an acidic taste, are great alkalizers and rich in vitamin C, folate, flavonoids, potassium and super healthy micronutrients called limonins.

We also added hemp and flax seeds to provide a healthy dose of essential fats, especially that important Omega-3s that reduce inflammation, protect the brain and your arteries. The seeds are also rich in lignans that are powerful anticancer agents.

Making the salad

This salad is quite easy to make, especially if you have an electric shredder. Simply peel the beet, Kohlrabi, red radish and carrots and put them into the shredder.

For the dressing, in a small bowl juice the lemon, add the pressed garlic and some flax seed oil or ground flax seeds. We prefer to use ground flax since it is super rich in lignans. Since the ground flax seeds absorb water quickly, you might want to add some water.

Mix it all together and enjoy!

Ingredients

For the salad

  • 1 beet, shredded
  • 1 Kohlrabi, shredded
  • 1 small long red radish (China rose radish), shredded
  • 2 carrots, shredded
  • ¼ bunch of parsley, chopped
  • 2 tbsp hemp seeds

For the dressing

  • 1 lemon, juiced
  • 2 tsp flaxseed oil or 2-3 tsp of ground flax seeds
  • 3 cloves garlic, pressed
  • salt to taste

Instructions

  1. For the dressing, mix the lemon juice, flaxseed oil, pressed garlic, and salt.
  2. In a large bowl combine all ingredients for the salad, pour the dressing over it and stir all together.
  3. Sprinkle with the hemp seeds on top and enjoy!

Notes

  • At home, we use an automatic grater for this vitamin salad and it is ready in just a few minutes. Super convenient.
