This is a salad that is as rich in nutrients as it is colorful. Only whole natural plant ingredients are used to make sure you get all the nutrition in the way nature intended.
It is rich in root vegetables that contain all the essential amino acids (proteins) and fats as well as vitamins A, C, manganese, potassium, iron… Also super-rich in antioxidants that reduce free radicals and detoxify the body.
Beets are also known to improve athletic performance. Radishes are cruciferous vegetables that contain the powerful immune system boosting and cancer-fighting micronutrient sulforaphane.
Garlic is known in many cultures as a superfood and for a good reason. It is super rich in antioxidants and other immune boosters – organosulfur compounds.
Lemons, although with an acidic taste, are great alkalizers and rich in vitamin C, folate, flavonoids, potassium and super healthy micronutrients called limonins.
I also added hemp and flax seeds to provide a healthy dose of essential fats, especially that important Omega-3s that reduce inflammation, protect the brain and your arteries. The seeds are also rich in lignans that are powerful anticancer agents.

It is quite easy to prepare.
All you will need is an electric shredder. It is just so useful and time-saving!
Simply peel the beet, Kohlrabi, red radish and carrots and put them into the shredder.
The wonderful dressing is also super easy.
In a small bowl combine the freshly squeezed lemon juice, pressed garlic and some flax seed oil or ground flax seeds. We prefer to use ground flax seeds as it is healthier and super rich in lignans.
Keep in mind that the ground flax seeds absorb liquids quickly. So you might want to add just a small amount of water.
Mix it all together and pour it over the salad. Enjoy!

I was scrolling through the internet for something healthy packed with vitamins. This was recommended to me.
A few things to note..where I live in Minnesota I could not find any german turnips so I decided to go with regular turnips. Chinese radishes were also not available as well and decided I had to go with baby radishes.
Now,my take of the salad and first as well.. the salad was a bit acidic using a full lemon, although I think it could have been because I did not have bigger ingredients to soak in all of the lemon possibly? The mixture of turnips, radishes , carrots, parsley were not overpowering they were enjoyable and tastefully satisfying. I never knew root vegetables could be eaten raw and taste decent compared to my regular diet of meats and carbs. I liked it. I think I will add this to my regular diet to help me towards my goal of eating healthier overall.
I would add a suggestion.. If a person did substitute baby radishes and german turnip. How many radishes should they use for the dish.
