Step 1: Place the sunflower seeds, water, lemon juice, and salt in a blender. Blend for several minutes until creamy. 

Step 2: Pour the creamy sunflower seeds mixture in a bowl and add the diced cucumber.

Step 3: Add the pressed garlic and chopped dill. Stir everything well.

Ingredients
 

  • 2 oz (60 g) raw sunflower seeds, shelled
  • 1 cup (240 ml) water
  • 1 lemon, juiced
  • 1 cucumber, diced
  • 1 clove garlic, pressed
  • ¼ bunch fresh dill, finely chopped
  • ¾ tsp salt
  • 10 ice cubes

Instructions
 

  • Place the sunflower seeds, water, lemon juice, and salt in a blender. Blend for several minutes until creamy.

    I made this for my daughter who is vegan and is recouping from septumplasty surgery-she is very sore-I tried it and I’m impressed! I contemplated using a plant milk in place of water but I wanted try with water first. I’ll try this again with soy or almond milk next time. I blended EVERYTHING together since she says it hurts to chew. It’s good that way too!
