Easy Oil-free Baked Zucchini Sticks

Crispy zucchini sticks seasoned with onion, garlic, and other aromatic spices. Baked without any oil to create this super fresh and juicy snack or side dish.

Ingredients

For the Zucchini Sticks

For the Sunflower Seeds Dip

  • 2 oz (60gr) raw sunflower seeds
  • 3/4 cup (180 ml) water
  • ½ lemon, juiced
  • 1 tsp nutritional yeast
  • 1 clove garlic
  • ¼ tsp salt or to taste
  • ¼ bunch fresh dill (optional)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Line a baking sheet with parchment paper.
  3. Chop the zucchini into long sticks.
  4. In a large bowl mix all ingredients for the zucchini sticks together and stir everything well.
  5. Place seasoned zucchini on the baking sheet.
  6. Bake for 25 mins.
  7. Meanwhile, put all ingredients for the sunflower seeds dip (except the dill) in a high-powered blender. Blend until smooth and creamy.
  8. Chop some fresh dill on top and enjoy!

  1. I had these for supper last night and they were very good. I didn’t expect them to be so flippy floppy (soft) but they were very flavorful. I will be making these more often.
