This is a plant-based recipe (no eggs, dairy-free) with whole food ingredients. One oil-free, healthy, and nutritious casserole meal!

My favorite part is that it is easy and quick to prepare. You will find it very convenient when you don’t have enough time to cook.

How to prepare this Easy & Tasty Broccoli-rich Casserole?

I love easy and simple recipes like this one!

Especially when they turn out so soft, creamy, and flavorful! And on top of that this casserole includes broccoli!

I can feed my family a healthy oil-free green meal and they really loved it!

All you have to do is to chop the veggies and steam them.

Steaming is probably the best cooking technique, preserving most of the nutrients (vitamins, minerals, phytonutrients) in the food. Unlike roasting or frying where some potentially toxic substances are formed, such as AGEs.

The potatoes and broccoli retain their inner juiciness and don’t get dry.

Steaming the broccoli florets also preserves their bright green color, making the dish much more appetizing.

The cashew sauce adds creaminess, texture and a finishing touch to this tasty and beautiful casserole. Just put all ingredients for it in a blender until smooth and creamy.

Enjoy it warm or cold. It makes a perfect lunch or dinner. Serve it as a side dish (3-4 servings) or a main dish (2 servings).

Optimized for Great Health and Weight

The simple natural, whole food ingredients make this Broccoli-rich Casserole a health-promoting meal.

There is no oil in this recipe for healthy blood, arteries, and a lean figure.

Potatoes contain all the essential amino acids (proteins) you need along with healthy fiber and complex carbohydrates that are satiating and keep you trim.

Broccoli is famous for its healthfulness, rich in vitamins, minerals, and antioxidants that fight inflammation, remove toxic waste and support a healthy immune system.

The garlic and onion, fresh or powdered, are rich in the super healthy detoxifying organosulfur compounds and flavonoids that are also proven to support weight-loss.

Turmeric is renowned for its cancer-fighting and immune-strengthening capabilities.

All the spice (basil, dill, black pepper) are micronutrient powerhouses that keep you healthy and help detoxification.

The nutritional yeast in one of the rare foods that contain all the B vitamins and the cashews provide the healthy fats your cells need.

For the sauce

  • Steam the chopped potatoes for 15 mins or until soft.
  • After that fold the broccoli florets into the steam basket and steam for another 5 minutes.
  • Place the steamed veggies in a casserole dish, add the seasoning (except the fresh dill) and stir.
  • Put all ingredients for the sauce in a blender and pulse until smooth.
  • Pour the cashew sauce over the potatoes and broccoli casserole.
  • Sprinkle with chopped fresh dill and enjoy!

You can find detailed instructions with photos in the post above.

I usually cool down the steamed broccoli florets under running cold water for a
minute, immediately after taking them out of the steamer. Thus, they keep
their bright green color and retain more of their nutrition.
