Easy and quick to prepare, you will find it very convenient when you don’t have enough time to cook.

Just chop the veggies and steam them.

Steaming is probably the best cooking technique, preserving most of the nutrients (vitamins, minerals, phytonutrients) in the food without creating potentially toxic substances such as AGEs.

You also don’t need to use oil.

The potatoes and broccoli retain their inner juiciness and don’t get dry.

Steaming the broccoli florets also preserves their bright green color, making the dish that much more appetizing. 

The cashew sauce adds juiciness, texture and a finishing touch to this tasty and beautiful casserole.

You can have it warm or cold. It makes a side dish (3-4 servings) or a main dish (2 servings).

Ingredients

  • 4 potatoes, chopped
  • 4 cups broccoli florets
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp turmeric
  • ¼ tsp black pepper
  • salt to taste
  • ¼ bunch fresh dill, chopped

For the sauce

  • ½ cup (70 gr) raw cashew nuts
  • ½ cup of water
  • 2 cloves garlic
  • 1 tbsp nutritional yeast
  • salt to taste

Directions

  1. Steam the chopped potatoes for 15 mins or until soft. 
  2. After that fold the broccoli florets into the steam basket and steam for another 5 minutes.
  3. Place the steamed veggies in a casserole dish, add the seasoning (except the fresh dill) and stir.
  4. Put all ingredients for the sauce in a blender and pulse until smooth.
  5. Pour the cashew sauce over the potatoes and broccoli casserole.
  6. Sprinkle with chopped fresh dill and enjoy!

Notes

  • We cool down the steamed broccoli florets under running cold water for a minute, immediately after taking them out of the steamer, so they keep their bright green color and retain more of their nutrition.
