Easy & Tasty Broccoli-rich Casserole | Whole Food Vegan

Vibrant green broccoli florets mixed with potatoes and seasoned with basil, garlic, turmeric, fresh dill. All that covered with the creamiest vegan cashew sauce ever!

For the sauce

  • Steam the chopped potatoes for 15 mins or until soft. 
  • After that fold the broccoli florets into the steam basket and steam for another 5 minutes.
  • Place the steamed veggies in a casserole dish, add the seasoning (except the fresh dill) and stir.
  • Put all ingredients for the sauce in a blender and pulse until smooth.
  • Pour the cashew sauce over the potatoes and broccoli casserole.
  • Sprinkle with chopped fresh dill and enjoy!

Notes

I usually cool down the steamed broccoli florets under running cold water for a
minute, immediately after taking them out of the steamer. Thus, they keep
their bright green color and retain more of their nutrition.
