  • lentils – I used brown lentils, you can also use green ones. If you use red lentils you have to reduce the cooking time.
  • sweet potato – you’ll need one very large sweet potato
  • veggies – the recipe calls for one large carrot and onion
  • tomato puree – I used canned tomato puree, you can also use canned chopped tomatoes.
  • coconut milk – opt for either light or full-fat coconut milk. Choosing the light option reduces the fat and calories in the recipe.
  • garlic – fresh garlic is best
  • spices – you’ll need curry powder, ginger, bay leaf, and salt. Try to use them all for best flavor.
  • parsley – put it last and use it for serving

How to Make This Sweet Potato Lentil Curry

  • cups (270 g) lentils, dry
  • 1 large (400 g) sweet potato, chopped
  • 1 large (130 g) carrot, chopped
  • 1 large (220 g) onion, diced
  • 3 cloves garlic, pressed
  • ½ cup (120 ml) tomato puree
  • 3 tsp curry powder
  • 1 tsp ginger
  • 2 bay leaves
  • tsp (1.5 tsp) Himalayan salt
  • ¾ cup (180 ml) coconut milk, full-fat
  • cups (840 ml) water
  • ¼ bunch chopped parsley, for sprinkling

Instructions
 

  • Place all ingredients for the sweet potato lentil curry in a large pot. Bring to a boil, reduce the heat, and let simmer covered for about 40 minutes.
  • Once it is cooked, sprinkle some chopped green onions or parsley on top. Enjoy!

Notes

  • Serve the sweet potato lentil curry with some cooked brown rice.
  • You can adjust the thickness of the lentil curry by adding more or less water according to your preference.

      Absolutely! This recipe works wonderfully in a crockpot. Simply follow the same steps but adjust the cooking time according to your crockpot settings. It’ll turn out deliciously! You can slightly reduce the amount of water to make it thicker if you prefer.

      You can use dry lentils right out of the bag. No need to soak them overnight-they’ll cook perfectly in the dish!😋However, you can also soak them to reduce cooking time significantly. Then probably you’ll need to adjust (reduce) the amount of water in the recipe. Enjoy!💛
