- 1 large (400 g) sweet potato, chopped
- 1 large (130 g) carrot, chopped
- 1 large (220 g) onion, diced

- ½ cup (120 ml) tomato puree
- 3 tsp curry powder
- 1 tsp ginger
- 2 bay leaves
- 1½ tsp (1.5 tsp) Himalayan salt
- ¾ cup (180 ml) coconut milk, full-fat
- 3½ cups (840 ml) water
- ¼ bunch chopped parsley, for sprinkling

- Place all ingredients for the sweet potato lentil curry in a large pot. Bring to a boil, reduce the heat, and let simmer covered for about 40 minutes.
- Once it is cooked, sprinkle some chopped green onions or parsley on top. Enjoy!
