These creamy garlic potatoes are an excellent comfort food with a luscious garlic tahini sauce and lots of fresh chopped dill.

Here are the 5 simple ingredientes you’ll need:

  • potatoes – use waxy, thin-skinned yellow or red potatoes like Yukon gold or small red potatoes. They hold their shape well after cooking and won’t become mushy.
  • tahini – you will need creamy tahini, look for one that has only sesame seeds listed as ingredients and no additives
  • garlic – I used fresh garlic, it adds great taste and aroma to the meal
  • lime – used to flavor the sauce adding wonderful zestiness, you can also use lemon
  • dill – I used fresh chopped dill, adds great flavor and is such a refreshing herb, use as much as you like

How to Make Creamy Garlic Potatoes

Step 1: Steam the potatoes – Add about 1-2 inches of water to the bottom of a large pot and bring to a boil. Once boiling reduce the heat slightly. Put the chopped potatoes in the steamer basket and cook covered for about 15 mins until fork tender.

Step 2: Make the tahini sauce – In a medium bowl mix the tahini, pressed garlic, lime juice, water, and salt. Whisk to combine.

Step 3: Heat it up to thicken a bit – Put the tahini sauce in a large non-stick skillet. Heat it up and stir constantly for just 3-5 minutes until it thickens a bit. (If the sauce thickens too much, add a little more water at this step).

Step 4: Add the cooked potatoes and dill – After that, reduce the heat, add the steamed potatoes and chopped dill to the skillet. Stir well to coat.

Top Tips

  • If you don’t have a steamer basket, you can also boil the potatoes and then drain them. Although I find they taste best when steamed.
  • If the sauce thickens too much when you heat it up – add a bit more water to it. If you thin the sauce too much – you can thicken it up again with some extra tahini, or a little bit of cornstarch.
  • If you don’t like tahini – you can use sunflower seed butter, cashew butter, or almond butter.
  • If you detect a subtle bitterness in the tahini, consider adding a half tablespoon of maple or date syrup to mellow and balance the taste.

How to Store

Make ahead: You can steam the potatoes 1-2 days in advance. Store them in an air-tight container in the fridge. Then, you’re ready to whip up the creamy potatoes in minutes!

Fridge: Store leftovers in a sealed container in the fridge for up to 5 days.

Reheat: You can reheat the creamy garlic potatoes in the microwave or in s skillet. The sauce will thicken with time so feel free to add a splash of water to adjust the consistency if needed.

  • 1.2 lbs (550 g) potatoes, yellow, cut into 1-inch pieces
  • cup dill, chopped
  • ¼ cup (60 g) whole sesame tahini
  • 3 cloves garlic, pressed
  • ½ lime, juiced
  • ½ cup (120 ml) water
  • tsp Himalayan salt
