Besides I am tired of those store-bought loaves of bread that last for several weeks. Plus they are full of numerous harmful ingredients.

I wanted something real, nutritious, and healthy! There is no added oil, only whole plant food ingredients in this recipe.

Einkorn flour is a special variety of flour. It originates from one of the most ancient species of wheat.

It has a low-gluten content and has never been hybridized. It is real, as it has been centuries ago. 

This is one of the best foods to eat!

Easy No Knead Einkorn Bread

Ingredients
 

  • 5 cups (500 g) whole grain einkorn flour
  • ¼ ounce (7 g) active dry yeast
  • 2 cups (450 ml) warm water
  • 1 tsp brown sugar
  • 1 tsp Himalayan salt
  • 4 tbsp raw sunflower seeds

Instructions
 

  • In a small bowl combine 1 cup of WARM water with the yeast, add the brown sugar, and 1 tbsp flour. Wait about 10-15 mins or until bubbles are formed (now you know for sure that your yeast is alive and your bread is going to rise). You can skip this step (*see notes).
  • In a large bowl mix the flour, salt, sunflower seeds, add the activated yeast and the other cup of water. Mix everything well with a spoon (you don`t have to knead) until a sticky well-combined dough is formed.
  • Line a round baking pan with parchment paper and transfer the dough into it.
  • Cover and leave to a warm place for about 30 mins to rise.
  • While the dough is rising, preheat the oven to 350°F (180°C).
  • Once the 30 minutes have passed and the dough has risen, bake it for 40-45 mins or until a toothpick comes out clean.
  • Let it cool for a while.

Notes

  • You can skip the first step (it is just a test to know if your yeast is alive) or when you use instant yeast. Simply mix everything well.
  • The formed dough is very sticky, you can smooth the surface of your bread with a wet hand.
  • You can prepare it in a bread machine as well.

    I usually make the same einkorn no knead recipe that includes butter and oil, but I actually like this one much more! I love the addition of sunflower seeds too. This loaf rose more than my usual loaf as well. This was so easy and will be my new go to bread recipe. Next time I’ll try adding some olives and herbs as someone else suggested. Maybe a cinnamon raisin loaf as well…the sky is the limit!

    I ordered the Einkorn flour on Amazon but then found it at my local Hyvee for half the price! I adjusted the recipe a little so I could get 2 loaves out of one 32 oz/907 gram package. I didn’t have sunflower seeds so used ground flaxseed instead. I made this in my bread maker. So easy and delicious!

      • Hi. I made it in the Pyrex dish. That helped the rise. Would it help to deflate it before baking? Mine didn’t rise as much as yours. Also, I bake it in a large toaster oven. Does that make a difference?

        • Hi, the bread should be almost, if not at its full size before going in the oven. So you should not deflate the dough before baking as it won’t rise as much. I haven’t used a toaster oven but I’ve read that it could bake bread and a lot more. Have you checked your yeast expiration date? It is always best to try if the yeast is active (see the first step of the recipe instructions on how to test it and be careful with the water not to be too hot or it’ll kill the bacteria).

I have made it 3 times now, once adding black olives and rosemary instead of sunflower. It will be my go to bread recipe now that I’ve figured out I can eat wheat if it’s einkorn. Love your website!
