These 3 ingredients coconut cookies are quick and easy to make for a healthy and delicious treat! They are also vegan, gluten-free, oil-free and made in one bowl.

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mash the well-ripened banana with a fork. Then, add the other ingredients to the bowl and mix well to combine.
  3. Take about one tablespoon of the mixture, shape it into a ball and slightly press it to flatten it. Place on the baking sheet.
  4. Bake for about 15 mins, let cool a bit and enjoy!
