Ingredients
 

  • 1 cup (130 g) frozen strawberries, thawed
  • ½ cup (50 g) coconut flour
  • 10 (110 g) regular pitted dates
  • 2 tsp lemon juice

For rolling

Instructions
 

  • Place all ingredients (thawed strawberries, coconut flour, chopped dates, and lemon juice) in a food processor. Blend until everything is well mixed.
  • Take about one full teaspoon of the mixture and roll it into a ball.
  • Roll each ball in cocoa powder and enjoy!

Notes

  • The recipe makes about 18-20 truffles.
  • It's not necessary for the strawberries to be fully thawed but they should be soft enough to chop them. If there is too much frost on them, thaw and drain them.
  • If your dates are a bit dry you can chop them into small pieces to make it easier for the food processor.

  1. I want to try this, but I don’t have coconut flour, what would I be able to substitute it with? would i be able to use frozen blueberries instead of strawberries?

    • Hi Danais,
      instead of coconut flour, you can try using almond flour as a substitute, although I haven’t tried it. Just keep in mind that almond flour is not as absorbent as coconut flour and generally requires less liquid in recipes. As for the fruit, frozen blueberries could work as a substitute for strawberries. Let me know how it turns out if you decide to give it a try!

      I guess you can although I haven’t tried them with fresh ones. If the mixture is a bit dry you can add just a bit more liquid like water or lemon juice. Hope this is helpful.
