Almost no oil and no sugars are used so that your blood stays pure and your weight is kept in check!

Instead of sugar, we used dates, fiber-rich, containing vitamins, phosphorus, potassium, magnesium, calcium, iron, and zinc.

Processed, unhealthy oil is switched for coconut flour which is rich in fiber and healthy medium-chain fatty acids.

Hemp and chia seeds are used as well, rich in immune-stimulating lignans and essential Omega-3 fatty acids that are vital for optimal cellular function.

Raw almonds have an alkalizing effect on the blood and provide healthy, fiber-bound fats that actually help you lose weight and help reduce bad cholesterol.

The whole bar is fiber-rich, which plays a central role in the body’s detoxification processes.

Blueberries, like all berries, lower the glycemic effect of other foods, which means you will have energy for longer and don’t get to store fats on your body easily. They are also super-rich in antioxidants to help you reduce inflammation and oxidative stress.

How to prepare this Vegan Blueberry Energy Bar?

I love making these healthy vegan desserts as it is so quick and easy to prepare.

Usually, such bars combine ground nuts and dried fruit. But this time I wanted something that tastes fresher and looks more colorful. So I decided to add blueberries inside. You can use fresh or frozen ones. If they are frozen (as mine were), let them thaw before blending them in the food processor. It will be easier.

Then I added some coconut flour, raw almonds, and hemp seeds. As the blueberries add moisture to the mixture, I added some chia seeds to absorb it, together with the other ground nuts and seeds.

This Blueberry Energy Bar is super healthy. It contains no sugar. I used the natural sweetness of dates. Their fruit sugar is combined with fiber, making it slowly digestible. So your blood sugar level does not rise rapidly and stays balanced, which is very important. You may adjust the level of sweetness according to your preferences. I think the taste is well-balanced between the blueberries and dates sweet flavor.

Now, as easy as it is, place all ingredients in a food processor and blend until finely chopped. You may need to add a small amount of water to go smoothly. Press the mixture well to the bottom of a baking pan, lined with parchment paper. Thus you can take it out easily. Refrigerate for one or two hours.

Decoration

Here is my favorite part of making desserts. They become even more beautiful and tempting!

Pour some melted chocolate on top and refrigerate for a while. I add a small amount of coconut oil as I melt the chocolate, so it does not harden so much and is easily chopped. Top with some fresh fruit and voila! Colorful raspberries or cranberries are just perfect!

  • Place all ingredients (except the dark chocolate and coconut oil) in a food processor and pulse until finely chopped.
  • Line a small baking pan with parchment paper and spread the mixture evenly into it. Press it well to the bottom of the pan.
  • For the topping, melt the chopped dark chocolate and coconut oil together and pour it over the blueberries mixture.
  • Refrigerate for 2 hours and enjoy!

Notes

  • If you use frozen blueberries, as I did, leave them to thaw so they can be easily chopped and to release their juices.
