- Blend the sunflower seed and water for longer until it is well combined and creamy. It took me about 2 mins.
- If you want you can also soak the sunflower seeds overnight. They start to germinate and become a lot healthier and nutritious. Soaked seeds will blend quicker and easier.
- This sunflower seeds soup thickens with time. So you can always adjust the thickness of your soup by adding more water.
- The ice cubes are very important for the overall taste and feel of the soup. It is quite refreshing when colder.

This is one vegan soup that is made with only simple whole food ingredients.
Ingredients
- 2 oz (60 g) raw sunflower seeds, shelled
- 1 cup (240 ml) water
- 1 lemon, juiced
- 1 cucumber, diced
- 1 clove garlic, pressed
- ¼ bunch fresh dill, finely chopped
- ¾ tsp salt
- 10 ice cubes
Instructions
- Place the sunflower seeds, water, lemon juice, and salt in a blender. Blend for several minutes until creamy.
- Then, pour the creamy sunflower seeds mixture in a bowl and add the diced cucumber.
- After that, add the pressed garlic and chopped dill. Stir everything well.
- Chill with the ice cubes. Enjoy!

I made this for my daughter who is vegan and is recouping from septumplasty surgery-she is very sore-I tried it and I’m impressed! I contemplated using a plant milk in place of water but I wanted try with water first. I’ll try this again with soy or almond milk next time. I blended EVERYTHING together since she says it hurts to chew. It’s good that way too!
