They are a wonderful healthy alternative to those well-known cream cheese stuffed tomatoes.
These creamy cashew stuffed tomatoes are healthy, plant-based, dairy-free, and gluten-free. They are also full of flavor and look marvelous!

No dairy, no sugar, no oil, nothing processed!
They sure taste great but they also care for your health.
Tomatoes are so rich in nutrition, especially the super antioxidant lycopene which will help you detoxify and reduce the oxidative stress in your body.
And that garlic and lemon… so rich in antioxidants as well, especially vitamin C. Garlic (and onion powder) is also rich in the immune system boosting organosulfur compound alliinase. Onion powder is also known to stimulate weight-loss!
I also added nutritional yeast for great taste but it is one of the few complete sources of B vitamins as well as a great probiotic!
And cashews… rich in fiber and healthy, fiber-bound fats. They are great for your microbiome, help reduce cholesterol, aid digestion and weight-loss!

How to prepare these Creamy Vegan Cashew Stuffed Tomatoes?
The recipe is quite easy. Yet, the end result looks just wonderful. These one-bite sized stuffed tomatoes are a great way to put more fresh veggies on your party table!
In this recipe, I used small-sized tomatoes but cherry tomatoes are also fine. In case you choose cherries, make sure you double their number as the cashew filling is a lot! Or you can just eat the rest of it on a loaf of bread!
It takes no time at all to prepare the creamy cashew filling. Just put all ingredients in a food processor and pulse until smooth and creamy.
Then, scoop the inside of the tomatoes. I used a knife and a small spoon.
Now, fill the tomatoes with the cashew filling. The easiest way is to use a decorating tool, you can also use a piping bag or just a small spoon.

Creamy Vegan Cashew Stuffed Tomatoes
Colorful fresh tomatoes stuffed with an amazing creamy cashew and garlic dip!
They are healthy, plant-based, dairy-free. They are also full of flavor and look marvelous!
- 30 small tomatoes
- 1 ⅓ cup (170 g) raw cashew nuts
- 1 clove garlic
- ½ lemon, juiced
- ½ tbsp onion powder
- 2 tbsp nutritional yeast
- ½ tsp salt
- ½ cup (120 ml) water
- Place all ingredients for the cashew filling in a food processor and pulse until smooth and creamy.
- Using a knife cut a hole in the center of each tomato. Then, scoop out seeds and pulp.
- Fill the inside of the tomatoes with the cashew filling. I used a decorating tool, you can also use a piping bag or just a small spoon.
- Sprinkle some chives or chopped dill on top. Enjoy!
