- Whole wheat flour – I used this type of flour for healthy whole food cookies. However, you can use regular or all-purpose flour.
- Ground walnuts – use plain raw walnuts, with no added salt, sugar, or oil
- Carob powder – adds extra flavor and aroma to the cookies. I love to add it to baking goods.
- Ginger and cinnamon – absolutely necessary for Christmas flavor and spirit
- Baking soda
- Pitted dates – better if they are soft and moist
- Liquid sweetener – one of your choice, like maple syrup, agave, dates syrup, honey

How to make Whole Wheat Cinnamon Cookies
As delicious and soft as they are, these vegan cookies are also easy to make and ready in just 25 mins. Follow these simple steps.
Step 1: In a large bowl mix the dry ingredients (whole wheat flour, ground walnuts, carob powder, ginger, cinnamon, and baking soda).
Step 2: Put the quarter cup of water and the dates in a food processor. Blend for 2-3 mins. I love to leave some date chunks and not completely blend them into a paste. (It’s great to feel the small pieces in the cookies).
Step 3: Add the chopped dates, liquid sweetener, and the remaining half cup of water to the bowl with dry ingredients. Stir everything with a spoon until a well-combined dough is formed. (If your dough is too soft and sticky add a little more flour and if it is dry add a little bit of water).
Step 4: Take about one full teaspoon of the dough and shape it into a ball. Then slightly flatten it on the baking tray. Do this with the remaining dough, leaving some space between the cookies as they will rise a bit while they bake.
Step 5: Bake the cookies in the oven for 8 mins. Let them cool before eating. They will be quite soft first but firm up once cooled.

- If the dough is too soft and sticky, you can add a little extra flour and if it is too dry add a little more water.
- To shape the cookies you can slightly moisten your hands with oil.

Whole Wheat Cinnamon Cookies
Ingredients
- 2 ¼ cups (295 g) whole wheat flour
- ⅔ cup (75 g) ground walnuts
- 3 tbsp (30 g) carob powder
- 1 tsp ginger
- 1 tbsp cinnamon
- 1 tsp baking soda
- ½ cup (65 g) regular pitted dates
- ⅔ cup (200 g) liquid sweetener, maple syrup, agave, dates syrup, honey
- ¾ cup (180 ml) water
Instructions
- Preheat the oven to 350°F (180°C) and line a large baking tray with parchment paper.
- In a large bowl mix the dry ingredients (whole wheat flour, ground walnuts, carob powder, ginger, cinnamon, and baking soda).
- Put a quarter cup (60 ml) of water with the dates in a food processor. Blend for 2-3 mins. I love to leave some date chunks and not completely blend them into a paste. (It's great to feel the small pieces in the cookies).
- Then, add the chopped dates, liquid sweetener, and half cup (120 ml) of water to the bowl with dry ingredients. Stir everything with a spoon until a well-combined dough is formed. (Look at the step-by-step photos above).Note: If your dough is too soft to shape it, add 1 or 2 tablespoons of flour and if it is too dry, add more water.

I didn’t have high expectations for this recipe. The only reason I made it is because I had a desperate need for cookies, and I happened to have all the ingredients in my house (although I substituted cocoa powder for the carob powder). They turned out great. I immediately ate half of them. Other people liked them too. They remind me of medenjaci.

I absolutely hate dates, I grew up eating and loving them, I’m now 64 and can’t look at dates, anyone have a sub for me, I’m always wanting a snack but there’s either tons of sugar or nuts ( I’m allergic ) , these are Perfect , Ty oh except the dates 😁
