Optimized for Great Health and Weight

It is a cake so you need to add sugar and some source of fat to make it taste like a cake.

That said, it does not have any oil but full-fat coconut milk.

Coconut milk has fiber, vitamins B1, B3, B5, B6, C, E and minerals including iron, magnesium, selenium, sodium, calcium and phosphorous. It is nutrient-rich, unlike any kind of oil.

Another source of healthy fats are chia seeds and walnuts, rich in healthy Omega-3 fats that are so important for proper cellular function and more than half of your brain is made from them. Walnuts and chia seeds are also rich in vitamin E, iron, selenium, calcium, and zinc.

All in all, it is a dessert but still a dessert that will add joy to your day but not damage your health.

Super healthy and delicious, homemade chocolate cake!

The walnuts give a nice, chunky texture while the chocolate frosting has an amazing rich flavor.

Plant-based recipe, without added oils!

Ingredients

For the Chocolate Cake

For the Chocolate Frosting

  • 2 cups full fat coconut milk
  • ½ cup of water
  • 5 oz (150 gr) dairy-free dark chocolate
  • 1 ¼ cup (100 gr) raw walnuts
  • 3 tbsp brown sugar
  • 3 tbsp ground chia seeds

Instructions

For the Chocolate Cake

  1. Preheat the oven to 350°F (180°C).
  2. Put the walnuts in a food processor until finely chopped.
  3. In a large bowl mix the dry ingredients (flour, sugar, ground walnuts, and baking powder). Add the coconut milk, water, and vanilla extract to the bowl. Whisk everything together.
  4. Line an 8-inch (20-cm) round cake pan bottom with parchment paper and put the mixture in it. Bake for about 30 mins or until slightly brown.
  5. Cool completely before cutting it.

For the Chocolate Frosting

  1. Put the coconut milk and water in a saucepan. Add the brown sugar and finely chopped dark chocolate.
  2. Heat the mixture and stir constantly until the chocolate is melted.
  3. When it is ready, fold in the ground walnuts and chia seeds. Stir everything well.
  4. Refrigerate for 2-3 hours or until the frosting thickens enough.

Assembling

  1. Cut the chocolate cake in two even parts.
  2. Spread half of the chocolate frosting on the bottom layer and cover with the upper part.
  3. Cover the top and the sides of the cake generously with frosting.
  4. You can decorate the sides with some ground raw walnuts or anything of your choice.
  5. Cool for several hours and enjoy it!

Notes

  • I love to serve it with some slightly sour fruit like raspberries. The sweet flavor of the cake combines perfectly with the slight tartness of
    the raspberries.
