Super healthy and delicious, homemade chocolate cake!The walnuts give a nice, chunky texture while the chocolate frosting has an amazing rich flavor.Plant-based recipe, without added oils!
Put the walnuts in a food processor until finely chopped.
In a large bowl mix the dry ingredients (flour, sugar, ground walnuts, and baking powder). Add the coconut milk, water, and vanilla extract to the bowl. Whisk everything together.
Line an 8-inch (20-cm) round cake pan bottom with parchment paper and put the mixture in it. Bake for about 30 mins or until slightly brown.
Cool completely before cutting it.
For the Chocolate Frosting
Put the coconut milk and water in a saucepan. Add the brown sugar and finely chopped dark chocolate.
Heat the mixture and stir constantly until the chocolate is melted.
When it is ready, fold in the ground walnuts and chia seeds. Stir everything well.
Refrigerate for 2-3 hours or until the frosting thickens enough.
Assembling
Cut the chocolate cake in two even parts.
Spread half of the chocolate frosting on the bottom layer and cover with the upper part.
Cover the top and the sides of the cake generously with frosting.
You can decorate the sides with some ground raw walnuts or anything of your choice.
Cool for several hours and enjoy it!
Notes
I love to serve it with some slightly sour fruit like raspberries. The sweet flavor of the cake combines perfectly with the slight tartness of the raspberries.
