Super delicious vegan einkorn nuggets from whole natural plant foods.
These nuggets are as healthy as any food can get!
Einkorn is an ancient wheat, very low in gluten and high in phytonutrients. That said, normal wheat berries are truly healthy still and work just as well!
The whole wheat berries give a chewy and somewhat meaty mouthfeel. They taste like real nuggets while being a whole lot better for you!
They are also prepared with raw sunflower and flax seeds instead of oils to make them even healthier.
Well seasoned and full of aroma, these nuggets are as tasty as they are satiating.
They are great on their own but we prefer them with our Creamy Walnut & Cashew Sauce.
You could use spelt or even whole wheat berries if you do not have einkorn. It’s still worth it!
Optimized for Weight-Loss
These are whole natural plant food nuggets.
Not even a drop of fattening oil is used nor sugar. No cancer-promoting meat nor dairy.
The whole wheat is rich in iron, fiber and healthy complex carbohydrates. They are slow to digest so you have energy for longer and don’t overeat.
The sunflower and flax seeds contain healthy fats in their natural form, especially those Omega-3s that are so important for brain health.
The parsley, paprika, cumin, turmeric, savory, and garlic are super-rich in antioxidants as well as flavonoids and organosulfur compounds! Antioxidants reduce oxidative stress and fight aging and disease processes, including cancer.

Ingredients
- 9 ounces (250 gr) einkorn wheat, soaked
- 3 ounces (80 gr) sunflower seeds
- 3 tbsp ground flax seeds
- 1 onion
- 1 small carrot
- ¼ bunch of parsley
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp turmeric
- 1 tsp savory
- 1 tsp garlic powder
- salt to taste
Directions
- Soak the einkorn wheat in plenty of water for 12 hours. Drain and rinse it.
- Preheat the oven to 180°C ( 350°F).
- Place all ingredients in a food processor, add ½ cup of water and pulse until finely chopped.
- The mixture has to be with a thick and sticky texture.
- Using wet hands, take about one full tablespoon of the mixture and shape it into a nugget.
- Line a baking sheet with parchment paper and place the nuggets.
- Bake for 30 minutes.
Notes
- We prefer to sprout the einkorn wheat for another 12-24 hours. It becomes softer and flavorful.
- If the mixture is too loose to form the nuggets, you can add 1 tablespoon of whole wheat flour or chickpea flour. More ground flax seeds will do as well as they soak the liquid.
- You can also prepare the nuggets in a pan. Place them on a heated pan without any oil. Flip them around to cook from all sides. They are ready for about 3-4 min, be careful not to burn them.

Do you know if it would somehow be possible to use einkorn wheat flour instead of berries here. Obviously it would use a different amount and probably have a different texture but do you think it would suffice? Thanks.

I guess you can use einkorn flour istead of berries but the texture will be different. However the taste will be the same, only it will be more difficult to shape them. You have to change the amount until you get there. I havent’t tried it with flour, but it’s interesting to try. Please share the result if you try them this way.

Einkorn wheat is ancient wheat that has a lot less gluten and is higher in other nutrients that normal wheat.
That said, you can probably use normal wheat berries and you will still get tasty and healthy whole food nuggets. The most important thing is to eat whole plant foods, after all.
