Place all ingredients, except raspberries, in a food processor. Pulse until smooth dough forms.
Take about one full teaspoon of the mixture and roll it into a ball. Make a small hole in the center of each ball with your fingers and place one raspberry into it. Then, gently seal the ball and shape it.
Roll each ball into cocoa powder or coconut flour.
Store leftovers in the fridge. Enjoy!
- This recipe makes about 30 small sized balls.
- If your dates are dry, you can soak them in warm water for 10 mins. Drain and put them in the processor. They become softer, juicier, and easier to chop.
- If your dough turns out dry, add one or two tablespoons of water as needed and process it again. This should do the trick.
- For the filling, you can use fresh or frozen raspberries. Make sure to thaw them before use.
