Easy No Oil Basil Pesto Tomato Salad

Ingredients
 
 

For the pesto

  • 2 handfuls fresh basil
  • ¾ cup raw walnuts 2 oz
  • ½ tomato 4 oz
  • ½ lemon juiced
  • 2 cloves garlic
  • ½ tsp Himalayan salt

For the salad

  • 2 large tomatoes sliced
  • ½ cucumber sliced
  • 1 red onion finely chopped
  • 3 leaves romaine lettuce chopped
  • 1 handful of raw walnuts chopped
  • several twists black pepper freshly ground
  • salt to taste

Instructions
 

  • For the pesto, put all ingredients in a blender or a food processor until finely chopped and well combined.
  • Layer the sliced tomatoes, cucumber and lettuce in a large dish,
    season with black pepper and salt. Sprinkle chopped red onion and
    walnuts over the salad.
  • Serve with the basil pesto.
