  • For the Chocolate Cake
  • Preheat the oven to 350°F (180°C).
  • Put the walnuts in a food processor until finely chopped. 
  • In a large bowl mix the dry ingredients (flour, sugar, ground walnuts, and baking powder). Add the coconut milk, water, and vanilla extract to the bowl. Whisk everything together.
  • Line an 8-inch (20-cm) round cake pan bottom with parchment paper and put the mixture in it. Bake for about 30 mins or until slightly brown.
  • Cool completely before cutting it.
  • For the Chocolate Frosting
  • Put the coconut milk and water in a saucepan. Add the brown sugar and finely chopped dark chocolate.
  • Heat the mixture and stir constantly until the chocolate is melted. 
  • When it is ready, fold in the ground walnuts and chia seeds. Stir everything well.
  • Refrigerate for 2-3 hours or until the frosting thickens enough. 
  • Assembling
  • Cut the chocolate cake in two even parts.
  • Spread half of the chocolate frosting on the bottom layer and cover with the upper part.
  • Cover the top and the sides of the cake generously with frosting.
  • You can decorate the sides with some ground raw walnuts or anything of your choice.
  • Cool for several hours and enjoy it!

Notes

  • I love to serve it with some slightly sour fruit like raspberries. The sweet flavor of the cake combines perfectly with the slight tartness of
    the raspberries.
