Healthy Quinoa Breakfast Bowl

This is one deliciously creamy quinoa breakfast bowl that will help you start your day in the healthiest way possible. It's so easy to make, fresh and truly satisfying. This bowl is gluten-free, vegan, oil-free and has no added sugar. It is easy to make and a great way to use leftover quinoa.

Ingredients
 

  • ¼ cup (50 g) quinoa, dry or 1 heaping cup (130 g) cooked quinoa
  • 1 large (135 g) banana
  • ¼ cup (60 ml) dairy-free milk, soy, oat, almond milk, etc
  • 1 tbsp cacao powder
  • 2 tbsp chopped raw walnuts
  • 4 ounces (115 g) strawberries, chopped

Instructions
 

  • Place the quinoa in a saucepan with ½ cup (120 ml) of water and bring to a boil. Once it starts boiling, cover with a lid, reduce the heat and let simmer for 12 mins. When it is ready, let it cool for a while.
  • Then, in a medium bowl mash the banana using a fork. Add the cooked quinoa, plant milk, cacao powder, chopped walnuts, and strawberries to the bowl and mix everything together.
  • Serve it warm or put it in the fridge to cool. Enjoy!

Notes

  • You can use any dairy-free milk - soy, oat, almond milk, etc.
  • You can cook the quinoa in advance and then have this delicious strawberry breakfast ready for just 5 mins.
  • If you don't find it sweet enough you can always add a teaspoon of your favorite liquid sweetener (agave, date or maple syrup, honey).
