- 1 medium zucchini chopped
- 2 medium tomatoes diced
- 1 red bell pepper chopped
- 1 medium avocado chopped
- 1 medium red onion sliced
- 1 cup sweet corn
- ½ cup fresh dill chopped
- ½ lime juiced
- ½ tsp Himalayan salt
- ¼ tsp black pepper
In a large salad bowl combine the chopped zucchini, tomatoes, red bell pepper, avocado, red onion, dill, and sweet corn. Season with freshly squeezed lime juice, salt, and pepper.
