Preheat the oven to 350°F (180°C) and line a baking pan with parchment paper.
Cut the zucchini in half and then into thin slices.
Place them in a large mixing bowl and add the other ingredients. Toss well until the zucchini are evenly coated.
Spread the seasoned zucchini on the baking pan into one layer and bake for 20 mins.
