1½ cups (270 g ) lentils , dry 1 large (400 g ) sweet potato , chopped 1 large (130 g ) carrot , chopped 1 large (220 g ) onion , diced 3 cloves garlic , pressed ½ cup (120 ml ) tomato puree 3 tsp curry powder 1 tsp ginger 2 bay leaves 1½ tsp (1.5 tsp ) Himalayan salt ¾ cup (180 ml ) coconut milk , full-fat 3½ cups (840 ml ) water ¼ bunch chopped parsley , for sprinkling

Place all ingredients for the sweet potato lentil curry in a large pot. Bring to a boil, reduce the heat, and let simmer covered for about 40 minutes.
Once it is cooked, sprinkle some chopped green onions or parsley on top. Enjoy!
Serve the sweet potato lentil curry with some cooked brown rice.
You can adjust the thickness of the lentil curry by adding more or less water according to your preference.
