Ingredients
 

  • 1 medium (280 g) zucchini, chopped
  • 2 medium tomatoes, diced
  • 1 red bell pepper, chopped
  • 1 medium avocado, chopped
  • 1 medium red onion, sliced
  • 1 cup (160 g) sweet corn
  • ½ cup fresh dill, chopped
  • ½ lime, juiced
  • ½ tsp Himalayan salt
  • ¼ tsp black pepper

Instructions
 

  • In a large salad bowl combine the chopped zucchini, tomatoes, red bell pepper, avocado, red onion, dill, and sweet corn. Season with freshly squeezed lime juice, salt, and pepper.
  • Toss everything well to combine. Enjoy!

Notes

  • There's no need to peel the zucchini, the skin adds fiber and nutrition. Just make sure to wash it well before chopping.
  • Try to find the freshest zucchini for a nutritious and healthy salad.
  • Optional: You can dice some smoked tofu and add it to the salad to make it more satiating.
