  • Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  • Combine the pitted dates and water in a food processor. Process until smooth, scrape the sides of the bowl to make sure all dates are incorporated.
  • After that, mix all the ingredients (shredded apple, oats, chopped walnuts, cinnamon, cardamom, and date mixture) in a bowl. Stir until all the ingredients are combined into a thick dough. Let sit for about 5 mins for the oats to moisten a bit.
  • Take about one tablespoon of the mixture and shape it with your hands into a round cookie. The recipe makes about 11 cookies.
  • Bake for 20 mins, then let cool for a while and enjoy!
