Preparation

Prep time: 10 minutes
Cook time: 20 minutes
Serves: 10-12 pancakes

Ingredients

  • 1Β½ cups whole wheat einkorn flour (whole wheat/spelt flour)
  • 2 cups of filtered water
  • 1 tsp brown sugar
  • Β½ tsp Himalayan salt
  • 1 tsp cinnamon
  • Β½ tsp baking soda
  • Β½ tsp baking powder
  • 2 Tbsp ground flax seeds
  • 3 Tbsp ground chia seeds
  • 1 Tbsp Maca root powder

Directions

  1. Place all ingredients in a high-powered blender and blend for 5 minutes.
  2. Cook in a non-stick pan without oil over medium heat for several minutes on both sides.
  3. Makes approximately 10-12 pancakes.
  4. Garnish with whatever you like.

Notes

  • The desired consistency should be a little bit thicker than usual for pancakes.
  • The flax and chia seeds serve as an egg-replacer. They partially soak the water and swell so that everything is kept together.
